The company, founded in 2023 by Eddie Brennan on the Beak & Skiff Apple Orchards property in LaFayette, captured about 5% of the state's cannabis market in units sold during 2025, when New York recorded $1.5 billion in legal cannabis sales.
Brennan, the fifth-generation co-owner of the farm founded in 1911, invested $5 million to build cultivation and manufacturing facilities after cutting down eight acres of apple trees.
He replaced seasonal apple sales, which once accounted for 80% of revenue, with cannabis operations that doubled the company's total sales. In 2025, Ayrloom generated $38 million while the 1911 hard cider brand produced $35 million. The farm now runs a THC beverage facility with six 4,000-gallon fermentation tanks and produces 10,000 pre-rolled joints per day.
Ayrloom was recently approved to plant a second acre of cannabis, doubling its capacity. Its products include vapes, flower, edibles and beverages, with the honey crisp THC drink as the top seller. Brennan said the move followed years of weather-related losses, including two back-to-back frosts in the 2000s that destroyed more than 50% of the apple crop.
“We were a distressed farm,” he said. “Our apple crop wasn’t sustaining us. ” The second legal marijuana product sold in New York in December 2022 was a bag of Ayrloom edibles. The company operates on land where 550 of the 1,000 acres remain dedicated to apple production.
