Crystal Hot Sauce Maker Reports $50 Million in Sales After Covering Multi-Year Shortfall with Owner Funds

Baumer Foods recorded $50 million in annual sales in the most recent year, a 5 percent increase from the previous period, according to @Forbes reported. The company produces Crystal Hot Sauce along with Worcestershire sauce, soy sauce and other condiments at its factory in Reserve, Louisiana. Alvin 'Pepper' Baumer, 37, serves as third-generation owner and CEO.

He assumed the role in 2019 and is the sole owner. Two train cars of mashed cayenne peppers arrive weekly at the plant and are pumped into four 20,000-gallon tanks for fermentation before water and salt are added and the mixture is bottled at a rate of 125 units per minute.

The business was founded in 1923 by Baumer's grandfather, Alvin Baumer, who purchased a snow-ball syrup company on Tchoupitoulas Street in New Orleans.

Refocused operations on hot sauce after taking over in 1980. The company supplied U.S. Army rations during the 1940s. Hurricane Katrina flooded the original New Orleans factory in 2005, destroying equipment and forcing two years of contract manufacturing.

A new plant opened in Reserve in 2007. During the pandemic, home-cooking demand lifted sales roughly 15 percent, but supply-chain disruptions created a $16 million revenue shortfall between 2021 and 2024 that Baumer covered with several million dollars of personal funds. Baumer has shifted the sales mix from a 50-50 split between branded and wholesale products to 70-30 favoring branded sales.

He aims to reach an 80-20 ratio. Tabasco, located two hours west on Avery Island, is estimated to be roughly four times Crystal's size. @Forbes reported estimates Crystal generates about $20 million in annual profit and would be valued at least $450 million if sold.
