Pickles glow orange when plugged into electrical current

A pickle connected to electrodes and plugged into a power source sizzled and then glowed bright orange at one end during a demonstration at a meeting of the Electrostatics Society of America. Pickles soaked in salty brine conduct electricity because the solution contains ions. The demonstration produced a noticeable aroma of singed pickle before the power was switched off.
Laboratory tests Researchers attached a high-speed camera and hydrogen sensor to a pickle and applied both alternating and direct current. Hydrogen was detected in both cases, showing that electrolysis occurred. The glow appeared only with alternating current.
The oscillating flow may keep a vapor pocket open long enough for sparks to ignite the hydrogen-oxygen mixture produced by electrolysis. Direct current produced hydrogen but no visible glow, possibly because the vapor pocket collapsed before sparks could form.
One-sided glow explained A vertically placed pickle glowed only at its bottom end, where brine collects. The juicier portion conducts current more effectively and produces the visible effect. After the demonstration the pickle was discarded.
